It's going to be using existing, old machines.

I have used LTSP in the past, but since this is going to be only 1 or 2
machines, i didn't want to go that route.
These machines will also not have access to the rest of the network, they'll
be plugged into internet only ports.

I have found some good info for locking down firefox.
