Well it depends on how far you are willing to go to get good performance and ease of use. if you only really care about minecraft running but, not very fast you could use crouton (linux running in a chroot). If you want a little more speed but, dont care to remove ChromeOS then look into dual booting ChrUbuntu. If you are looking for it to behave like a normal computer then you are going to need to reflash your firmware. If you are more than the causal linux tinkerer and have heard of something called core-boot before then, I recommend that for the learning experience.
If you reflash what you would get is the flexibility to do whatever you could possibly imagine because core-boot is itself a tiny linux environment. Also ChromeOS would no longer be a thing. That could be good or bad depending on how much you like it. tl;dr Running linux on the chromebook is a prerequisite to getting minecraft running on it.
