Moin does store previous revisions of files (in the 'backup' folder alongside the 'text' folder), but not the latest revision. That, we can retrieve, in theory, from the change notifications. In practice, we had to do that when the avalon wiki was erronously wiped a while back, and it is a major headache which takes hours to figure out.

If someone with enoug priviledges runs an rm -Rf in the wrong place we've got a big problem.

yes, if the edit is through the web, that is easy enough (though not enabled by default). The 'i' icon in the top right corner of each page gets you a page with a link to the revision info. Click on the 'view' of a revision, and replace 'action=recall' with 'action=raw'. You can copy-paste that content in the edit pane of the page to restore it.

I don't think anyone has modded moin to automate that process, probably in part because...

UseMod kinda, MoinMoin, I'm not sure.  In the longer run, Greg is working on
a Subversion-based Wiki that would be a drop-in replacement for our Moin
Moin Wiki Farm.
