I think that your problem does not related to Excel but rather ODBC on Mac.  I 
didn't have experience on macosx, but there is open source odbc manager on 
non-window platform. I have tested iodbc and unixodbc with J on linux, both of 
them work but most of the odbc drivers are commercial.  You may take a look at 
http://www.iodbc.org/

BTW if you only need to read or write excel files on Mac, you may use tara.
