I see in the bootstrap guide, it mentions setting CHOST for getting
64bit native, but nothing about needing to set it in the environment.

Funny, that gcc-config has all sorts of stuff trying to figure out the
REAL_CHOST, whereas binutils-config doesn't and gets it right.

Anyway, I had to set REAL_CHOST to sparc-sun-solaris2.10 for things to
continue correctly.
and what /was/ your CHOST?
