Assume you would like to be installing new versions of programs when they were released by their writers. In that case you would likely want to default to ~amd64, which is a compromise between that and 'complete system stability'. If a new program turns out not to work for some reason, usually it is downgraded as soon as people start yelping. Until then, keep FEATURES="buildpkg" in your /etc/make.conf and reinstall the older version using something like 'emerge -K "=package-1.2.3.4-r37"' Also you can use /etc/portage/package.mask to disable versions temporarily or permanently, if they give you trouble (such as failure to be built). I do this pretty often, along with emerge -K.
