I'll use 2007.0 profile, but i have read that is missing the use flag
ATI for Xorg.
Can work if i add by hand those missing useflag in the etc/package.use ?

It definitely is better, since you could otherwise end up with
artifacts
from the older python versions and things might not work correctly.
Pretty much if anything major changes in system (gcc, glibc, binutils,
portage, python) it is usually a good idea to rebuild the stages.
