app-crypt/envchain: version bump to 1.0.1

Closes: https://bugs.gentoo.org/696414

Changes are:
- v1.0.1: this release has some bugfixes
- keyword ~x86 added: tested and works fine
- EAPI 7: which required no other changes
- packages was up for grabs: added myself as proxy maintainer
