/usr/share/applications/*.desktop

However, they're all installed by package; install the same things,
you'll get the same entries.

That said, you may want to check out sabayon. (System -> Administration
-> Lockdown Editor and System -> Administration -> User Profile Editor).
It can be used to make pre-configured Gnome environments for a user, and
to keep the user from changing parts (or all) of that environment.
