Just replace the root / with ${ROOT}. ie:
pkg_postinst() {
# Hack to fix ownership/perms
chown -fR firebird:firebird "${ROOT}"etc/firebird
"${ROOT}"usr/share/firebird
chmod 750 "${ROOT}"etc/firebird
pkg_config() {
cd "${ROOT}"usr/share/firebird
