Yes, GNAP can help. GNAP leverages Catalyst LiveCD-building power to help build customized appliances. The more you customize it, the closer to Catalyst you are. Also behind GNAP is the notion of interchangeable hardware for a network function (based on LiveCD hardware discovery), that you won't get so easy in classic Gentoo embedded building. That said, the Gentoo embedded classic approach works very well if you are confortable with it and will end up in a more customized and slimmer system...
