I can't say much on the reasons for your losing the gcc,
but as to saving your system:

you made a backup before --depclean, right? use it, or at least
the gcc bit. or else take the gcc out of a dated backup and do
a bootstrap.

without backup, you can get a gcc binary from elsewhere (probably requiring
the rest of the toolchain, too) and put it into the old gcc's place.
then do a bootstrap, that is, compile gcc, glibc, and probably
binutils for good measure for a couple times until the binaries
do not change no more. for all practical purposes, three passes
should do and you are back in business.

or cross-compile a gcc for that machine, take another gentoo-hardened
gcc or...
