I don't think you can run an mpich compiled executable with lam. I think one possible way would be to create your own ebuild file (copy of the mpich ebuild) and change the dependencies there.

I have stooped using mpich and started use lam-mpi take a look at that ?

I have never tried mpich without X so I cannot say much more.
