FYI, to have the option to automatically boot off of either mirror'd boot device, just make sure you setup both harddrives with grub and default to (hd0,<whatever>) ie (hd0,0) so that if hd0 dies or is removed, when it reboots hd1 will become hd0 and it'll just boot automatically without any change.

If it is the same size as your current root partition, I'd mirror them (and the /boot partition too) using md raid1, and set grub to have the option to boot either. That way if one disk goes down, you have a full root system to come up to.
