I've been running Gentoo on some production servers the last three
years without problems and headaches.

Upgrading is not as problematic as you could think. Is just a matter of
thinking twice before emerging new versions of important packages. For
example: if you upgrade MySQL from 4.1 to 5 you need to know that PHP
will need to be recompiled, so recompile it before restarting the
services, etc. revdep-rebuild et al are your friends, you know =B^)
