As far as I know it doesn't.  When I've done "emerge gkrellm" it says
version 2 on the package it grabs however it installs both gkrellm and
gkrellm2.

I'm not sure but altering your world file entry that says
"app-admin/gkrellm" to say "=app-admin/gkrellm-2.1*" might help.  I've
done like with some of the gkrellm plugins because I actually perfer
some of the version 1 ones or in the case of xmms I find the version 2
one doesn't work with my system.  Since doing the "=<package>-<number>*"
I don't think it's nagged me to update the things in question.  Before
I'd done that however it wanted to update the volume plugin to the
gkrellm2 varient along with the xmms plugin.  However oddly I've found
it doesn't restrict gkrellsun to a single version when I've tried it
with that.(instead it still installs both versions of the plugin)
