Note there is no way to tell portage to overwrite or install along side, it depends on the ebuild (and also the source of the program you are installing).
Luckily for you, gimp 1.3 is in a different slot than gimp 1.2, which you could have figured out by looking in the ebuild. It says it is an update, because it is an update. 1.3 is greater than 1.2. But gimp is slotted, so it will not 'erase' the gimp in the other slot.
