Earlier I filed a bug report about this:

If you follow that, you should know when it has been fixed.  In the
meantime, the following may work for you, so you can upgrade other
programs than evolution

USE="-mozilla" emerge -up world

then, you can upgrade the programs other than Evolution seperately with
the regular emerge -u <program>
