I don't know, if anybody is planning something like that, but I don't think, that it is wise. If you want to build a minimal mailserver, everything you need is in portage, so why should someone develop a 'spin off' or 'feature' that is completly useless and will only bring more bloat into gentoo? If you want a real 'special mailserver'.. there are a lot of other distros out there doing that, and they want mony for their mailservers, ask yourself why.
