that option is in your X config (/etc/X11/XF86Config). near the bottom in your file, you should something like this:
the line "Modes" will have all the available resolutions for X, the first being the default. if at any time, you want to switch between them, ctrl, alt, +/- will toggle between them.

And if you are using xfree 4.3.0 or above, you can use the program 'xrandr' to change the screen size and resolution (not just the screen resolution like "back in the day" [ex. six months ago])
I believe KDE 3.1 has this feature in their control panel, but I dont have KDE to check. Gnome 2.4 has xrandr support.
