GIMP, I'm not sure about. For OpenOffice, I got this tip from the forums;

1) Move all fonts from /opt/OpenOffice.org1.0.3/share/fonts to 
/usr/X11R6/lib/X11/fonts/
2) Remove /opt/OpenOffice.org1.0.3/share/fonts
3) Make a symlink from /opt/OpenOffice.org1.0.3/share/fonts to 
/usr/X11R6/lib/X11/fonts/

This works great in that all fonts are available and any new font 
installations (that don't go in /usr/share/fonts) get automatically added to 
OpenOffice.
