The reason there is no update of the folder status, is because Evolution isn't 'retrieving' that mail. It's being 'plonked' into right into it's inbox.
What I'd suggest is setting up pop or imap locally, have postfix deliver to inbox of your pop3/imap mail folder. Then setup Evoloution to retrieve mail from pop3/imap. It will then place it in the /home/istari/evolution/local/Inbox/mbox/new folder.
