Well i'm not a gentoo expert, but i can tell you that stage 1 only installs about 8 or 9 packages, stage 2 about 71 further packages, which is very little IMHO, it doesn't even include a kernel logger or a cron daemon..

I've just setup my firewall, complete stage 2 including tarballs
plus firewall plus a handsome of tools, that only requires about 750 MB.

I can't see big security problems using the default stage2 setup;
even sshd isn't running after installing stage2. I heard several
people using gentoo for production servers, but - i'm no expert.
