I am at work now and not at my home Gentoo system. I was planning on re-emerging grub again and go threw installing it tonight. I will update if that helps.

Did you mount /boot before you [re]installed grub?  I am not sure that it
should matter, but it might be worth trying it again.

# mount /boot
# emerge grub
# grub

Reinstall the bootloader as before and see how it goes.
