Not a server, but a command-line substitute for sendmail is
ssmtp.  mutt can use this quite well, but I don't know about the
fatter, GUI e-mail readers.

ssmtp uses one small config file: /etc/ssmtp.conf.  All it does
is forward to a smart host.
