Depending on what I'm using the box for, I will use one of a couple of
different methods.

Having a seperate /home mount point is nice if you plan on enforcing
quotas on a shell server.

Having a seperate /var/www or /var/ftp is nice for a web or ftp server,
repsectively.

On a community development system, having a /usr/local mountpoint is nice
as you can create a directory structure for everyone to put their "stuff"
in. Likewise on a development system that uses cvs, having a /cvs mount
point is often a good idea.

So, for me, it really depends on what I plan on doing with the box. There
are plenty of schools of thought when it comes to filesystem arrangement.
It's not strictly a science, and it's not really an art... it's somewhere
in between.
