I'd go multi-CPU. The Athlon 64 is a good processor, but with the multitude of things you have going on all at once, I would think being able to handle multiple processes at once would be more what you need. the 64 can still only handle one process at a time.
I have a 2800 w/ 512Mb of ddr400, and it's a really quick machine...a dual proc 2600 or 2800 would probably be ridiculously fast if set up correctly.
