In case you're using udev, you can give them whatever name you want, based 
on the mac address:

$ grep eth /etc/udev/rules.d/10-local.rules
KERNEL="eth*", SYSFS{address}="00:50:8b:90:be:3c", NAME="lan"

$ /sbin/ifconfig
lan       Protokoll:Ethernet  Hardware Adresse 00:50:8B:90:BE:3C
[Some lines skipped]
