The just use the Ubuntu kernel: Boot Ubuntu again, and get its kernel
.config from /proc/config.gz like this:
cd /mnt/gentoo/usr/src/linux
zcat /proc/config.gz > .config
make oldconfig
Modify as you like and build the kernel again.
