It's possible, there's even a Gentoo document on it, http://www.gentoo.org/doc/en/change-chost.xml Note the first line states "Changing the CHOST is a big issue that can seriously screw up your system" Any time you consider a process that involves emerge -e world, you should also consider a reinstall.
