Looking through the files that openoffice-bin-2.0.0_rc3 installs, the majority of the files are installed to /usr/lib/openoffice/. IIRC, the 1.x series uses /opt, so that should be ok. Everything else (icons, .desktop files, files in /usr/bin, etc) have the version in the file name, so you will not have a conflict with those.

However, I can also tell you that I have been using the beta & RC builds for most of this year, and have not seen anything that would make me want to go back to 1.x!

And as Joachim said, quickpkg may be the better option.
