Mailservers are generally I/O bound. So getting fast disks will help. Spam checking is generally CPU bound. So getting fast CPUs will help. You should design your mail server around peak usage rate, say max number of emails per hour, instead of per day. That being said, <1000 mails/day is really low volume and any modern and not-so-modern (meaning PIII) server can do the job without breaking a sweat. No need to spend big $$$ for such a volume.
