I use a custom Gentoo in a VMWare on XP all the time for LAMP development. Works like a charm.
Given how pokey Gentoo can be to install with all the compiling and such, perhaps you might start with a pre-configured one, and then just 'emerge -Davu world' as needed... (ps.
