Don't put the whole of /usr/portage on the DVD, since all the ebuilds etc you won't be using are a waste of space. Rather, just put packages/ on the DVD, and mount it there.
You could also use a NFS to access the files. Just put all the souce tarballs on one machine and share them with the rest. Just a idea.
IMO this is a better idea, since you can have access to the entire tree if you need it, and you don't need to waste money on DVDs.
