Hello James, Well, since this this thing is nearly brand new, and UDMA worked in Windows until some time after I installed Gentoo (I don't think Gentoo had anything to do with it), I doubted it was the BIOS - I checked anyway. Everything that should be enabled is set correctly. I am certain that it is a Windows problem - probably from some software I installed. Anyway, thanks for the advice.
