why:
/boot is where you mount (hd0,0) while gentoo is running, but while
grub is running you're starting from the boot partition's filesystem
root. Easy mistake, I do it all the time when I try to do something
fancy with grub.

Aren't they both supposed to be OK? /boot/boot is a symlink to /boot, I believe the idea is that (hd?,?)/boot/<blaablaa> works regardless whether /boot is a partition or not.

If /boot is on a seperate partition, the /boot/boot symlink never gets created - or at least not in the correct place - unless you are aware of the problem and take steps to correct it. That is one reason why I do not advocate creating a seperate /boot partition unless you really know what you are doing. ;)
