Using Mapserver 8.0.0 with MS4W 4.0.5the biggest change I had to make was in 
the mapbook:

Old Mapserver
<file>./demo/parcels/parcels.map</file>

New Mapserver 8.0.0
<file>demo/parcels/parcels.map</file>

For some reason the path parser no long accepts:
C:/ms4w/apps/gm3-demo-data/./demo/parcels/parcels.map
but it does like
C:/ms4w/apps/gm3-demo-data/demo/parcels/parcels.map

And I agree with Jim: wait for Jeff to do all the heavy lifting with MS4W.

conda-forge might be another option for getting MapServer on Windows, but I 
don't know that I'd call that easy.  It's probably worth waiting to see if Jeff 
chimes in on MS4W.
