I use GTOPO30 all the time.

You need 2 files, *.dem and *.ers
Make sure the *.ers file is correct, I have all of them for areas defined 
on the CDs. If you have downloaded one of these let me know and I'll send 
you the file.
Once you have this, then you need to use COPY/CONVERT grid, and you're set.
