Solomon- It sounds like you can solve your first problem with a simple addition. Database tools > Channel math > C0=C1+500
The contouring problem might be caused by having a large dynamic range in the grid. You can either truncate your data (cap everything at +/-1nT) or you can try to enhance the resolution of the small numbers by using the "log-linear, save linear" gridding option with a small "log minimum" value (1).
