Hi Dale To create geotiff file from ArcGIS 10, you need to export from you Data View in you Export Map windoes you will see FORMAT option and just need to select WRITE GEOTIFF TAGS.
Because if you try to export it from the LAYOUT VIEW you will bot be allowed to select the opcion Write Geotiff Tags.
