The installer sets GEOSERVER_DATA_DIR to /var/lib/geoserver/geonode-data/. The printing module looks for its configuration in (GEOSERVER_DATA_DIR)/printing/config.yaml . If the installer is creating an extra gs-data/ directory inside the data directory that is a bug (cc'ing Ariel in hopes he'll investigate) but the path in the docs is right.
