Looks good, the java considerations page
<https://docs.geoserver.org/stable/en/user/production/java.html> has been
updated <https://github.com/geoserver/geoserver/pull/4428>, I would
recommend OpenJDK 8 (with Marlin as you already describe) and "Unlimited
Strength Jurisdiction Policy Files" if they are not already provided by the
Ubuntu OpenJDK 8 distribution.

I had a question about storage of:
- GEOSERVER_DATA_DIR
- GEOWEBCACHE_CACHE_DIR

I see these assigned in different locations on each of the Dockerfile
examples provided. One makes the GeoServer data directory a volume (I
suspect to make backups and updates easier).

I think this is worth discussion!
