DataStores live in GeoTools (they are detected at runtime by GeoServer 
using SPI). The old OracleDataStore can be found under 
modules/unsupported/oracle-spatial. For example:
http://svn.osgeo.org/geotools/trunk/modules/unsupported/oracle-spatial/

There is also the jdbc-ng version mentioned by Arne.
