GeoServer accepts characters in typenames that lead to non well-formed XML

As soon as typenames appear in XML (WFS, WMS GetFeatureInfo), they need to 
conform to http://www.w3.org/TR/REC-xml/#d0e804

This is not enforced in GeoServer. My suggestion would be to notify the user 
when an invalid typename is choosen and not to accept the typename.
