Hibernate catalog objects can't be converted into XML

Catalog objects un/marshaling from/into XML is driven by the XStreamPersister
class.
The XML representations concerns REST calls as well as other WxS request, such
as WMS getCapabiities.
We need to
1) make XStreamPersister mappings customizable
2) customize XStreamPersister mappings when using the hibernate catalog
