Hi Tony,

What exactly are you changing? Afaik there are two forms of request 
logging that occur when running in the jetty container. One via a 
GeoServer filter (Which is turned off via web.xml) and one via jetty 
itself. If you go into the jetty/etc/jetty.xml file of the geoserver 
install and search for reqestLog, you should see it.
