Sorry, this is over my head... but the only thing we care about is keeping the 
WCS requests from overwhelming the server.
We can achieve that given that our data source is SDE?

Nope, WCS does not use overviews (pyramids) to ensure the data is always 
computed from the most accurate source (the original data).
In theory we could allow the administrator to choose between accuracy and speed 
on WCS as well (WMS uses the overviews/pyramids automatically), but that's a 
topic orthogonal to limits
