App-schema: test mappingName with special characters enclosed in quotes

There have been complaints about errors being thrown for having special
characters in mappingName in app-schema mapping file.
Niels has investigated and found that enclosing with single quotes work for
this.
Apart from updating the doc, we also need to add a test case to prove this.
