For 1.7.x see -DconfigDirectory and -DconfigId at 
<http://geoserver.org/display/GEOSDOC/Maven+Build+Reference>

for 2.0.x and trunk... sure you ran mvn eclipse:eclipse on the top project 
directory (src)?
If yes please provide the full steps that you followed.

when importing the src directory into eclipse you should get a bunch of 
projects(platform, main, wms, wfs, etc)
