You don't say which version of GeoServer you're using?
GS 2.0.2 has a known memory leak in WFS.

In any case, upgrade to 2.1.0, try again, if the memory leak is still there
provide data and a request script to make it reproducable and attach
it to a bug report on jira.codehaus.org
